Maitake mushrooms grows in clusters at the base of trees, particularly oaks. The mushroom is commonly known among English speakers as hen-of-the-woods, ram’s head and sheep’s head.
Maitake mushrooms are often found in recipes from Southern China. They are delicious in Chicken Stir Fry, Shrimp Chow Mein, Oriental soups and sauces.
To Reconstitute Dried Mushrooms
To reconstitute, blanch in boiling water for 2 – 5 minutes or soak 30 minutes in lukewarm water, wine or consommé. If desired, reserve liquid to add flavor to dishes.
Storage of Dried Mushrooms
Store in a cool, dry place.
